Satay Chicken Skewers’

Add some flair to your next BBQ with these satay chicken skewers! These skewers will transport you to the world of Asian Hawker markets, all from the comfort of your backyard. They’re crispy, smokey and oh-so-very flavoursome.

Serves 4

Peanut Free, Gluten Free, MSG Free, No Colouring and No Artificial Additives.

Ingredients

  • 800g chicken thighs – diced into 3cm cubes
  • 7 tbs Mrs Tran’s Kitchen Rice Paper Rolls Dipping Sauce
  • 7 tbs sesame oil
  • 7 tbs curry powder
  • 5 tbs lemon juice
  • 1 red onion – diced
  • 5 tbs sugar
  • 5 tbs lemongrass – minced or finely chopped
  • 1 pack of bamboo skewers
  • – optional: 3 tbs peanut butter

Alternative Meats: Pork, Beef
Vegetarian Alternative: Pan-fried tofu or mushroom

Method

PREPARATION:

  1. Combine all the ingredients into a bowl and let it marinate for a minimum of 1 hour or overnight for the best result.
  2. Soak bamboo skewers in water for at least 1 hour, to prevent them from burning
  3. Thread the cubed chicken on skewers.

COOKING DIRECTIONS
PAN FRY:

  1. Heat grill pan on high heat and put the skewers onto the pan.
  2. Remember to turn the skewers over and grill the other side until both sides are fully cooked.
  3. When the chicken is firm to touch, it is ready to be served.

BBQ:

  1. Grill the skewers over a hot charcoal BBQ remembering to turn over to cook both sides thoroughly.
  2. When the chicken is firm to touch, it is ready to be served.

COMPLETE GLUTEN-FREE SERVING SUGGESTIONS
Gluten-Free Option 1: Serve with white Jasmine Rice and fresh veggies (eg. Cucumber, red onions, etc).
Gluten-Free Option 2: Wrap the chicken and your favourite veggies with Mrs. Tran’s Kitchen Rice Paper
